A l’Olivier Cassis Vinegar
A l’Olivier has founded in 1822 in the Marais quarter of paris by Monsieur Popelin, a pharmacist. He believed that olive oil had many health virtues and strongly believed that the Mediterranean way of life was a healthy one. The shop was purchased by oil merchant Jean Claude Blanvillain in 1978 and in 1985, opened workshops in Provence, a stone’s throw from the olive groves themselves. The family olive oil business still operates there today, with additional sites in Poitiers to make nut oils and in Paris for distribution operations.
This cassis vinegar works as a beautiful salad dressing but also pairs fantastically with poached pears, rich meats and foie gras.
