Capers, Salted, Antonino Caravaglio
The capers of Caravaglio are still harvested by hand from May to August on the green Aeolian islands before being salted with Trapani salt to cure them.
These capers are full of flavour and add a salty, tangy, lemon like flavour to a whole range of wonderful dishes.
