Cornichons are mini gherkin cucumbers, harvested before reaching full maturity for an extra-tart and crunchy bite to balance cheeses, pâtés and rillettes or cured meats. They are particularly good with Appenzeller and other Alpine cheeses.
Try them diced finely with a shallot and a couple of mashed dates or date molasses to make a quick relish, or slice finely to jazz up a potato salad.
