Fleur de Maquis

Fleur de Maquis means Flower of the Maquis - Maquis being the word to describe the dense vegetation, characteristic of Mediterranean coastal regions. The cheese is a tribute to the vegetation on the hilly island of Corsica. It is wrapped is a coating of wild herbs from the local maquis.


Fleur de Maquis is a semi soft, creamy and moist cheese with a mild, citrus flavour when young, which develops into a sweet, nutty taste as the cheese ages. It is aromatic and floral from the rosemary and sariette on the outside of the cheese.


This cheese is aged for 2 to 3 months and is made with raw ewes’ milk and traditional rennet.


Please note that the Fleur de Maquis come in three sizes and we buy whatever is available at the market in Paris on the day. We sell these cheeses by weight so it's possible that you could receive a whole, half or quarter cheese depending on which size we have in. Thank you for your understanding.
