Flower Marie is an artisan, soft, mould ripened cheese made from unpasteurised ewes’ milk from Wayfield Dairy Sheep in Stratford-upon-Avon. The recipe was developed by the late James Aldridge and then passed on to the Golden Cross Cheese dairy in the early nineties.
Flower Marie is a squidgy and creamy cheese with a bloomy rind. The flavour of the cheese is mild, sweet and grassy, with earthy undertones.
This cheese is aged for 2 to 4 weeks and is made with raw ewes’ milk and vegetarian rennet.
