Sakura was created in the late 1990’s by Fabrice Aznarez who had recently taken over the cheese business of a vendor based at the Ezy-sur-Eure market. He began creating cheeses in the Centre-Val de Loire region. His father had a culinary arts diploma and worked regularly with Japanese chefs who recommended that Fabric pair Japanese flavours with his wonderful goats’ cheeses. He settled on sakura, an ornamental Japanese cherry leaf which now sits at the centre of each cheese.
Sakura is a beautiful, rich and decadent goats’ cheese with a cherry leaf all the way through the centre. This imparts an nutty, almond and cherry flavour. The texture is silky and the cheese retains the natural sweetness associated with ewes’ milk cheeses.
This cheese is made with raw goats’ milk and traditional rennet.
