Sinodun Hill is made at Earth Trust, a charity farm in South Oxfordshire. It is one of the newest cheeses in production, having only been created in 2016.
Sinodun Hill has a mousse like texture, velvet creaminess and delicate, yoghurt like flavour which becomes sweeter and nuttier with age. The cheese often develops blue or grey rind on the outside, which add to the character and flavour of the cheese and are completely normal.
This cheese is aged for 3 weeks and is made with raw goats’ milk and vegetarian rennet.
