Smoked Cheddar Gorge Cheddar
The Cheddar Gorge Cheese Company is the only remaining producer of cheddar left in the village of Cheddar, Somerset. They are a family, owned, independent, artisan cheesemakers and are rated as one of the best in the world, with their cheeses winning many accolades. Only fresh, local, unpasteurised milk is used so that the full flavour of the terroir comes through.
Smoked Cheddar Gorge Cheddar is genuinely cold smoked for 24 hours over smouldering whisky barrel chippings. The cheese is firm in texture but supple and creamy, with a smokey flavour and honey like sweetness.
This cheese is aged for 6 months and is made with raw cows’ milk and traditional rennet.
