Bevistan cheeses are made on Valley View Farm, which is nestled away in a beautiful North Bedfordshire Valley overlooking the Great Ouse river. The farm is home to a flock of French and Dutch sheep, which graze on lush grass from spring to the end of autumn. St Ivo is made by friends of Bevistan dairy, using their milk, right here in Cambridgeshire.
St Ivo is a beautiful ewes’ milk log with a rich, ultra smooth and creamy texture. The centre of the log is decadent and firmer, whilst the outside is gooey and soft with a delicious natural rind.
This cheese is made with pasteurised ewes’ milk and vegetarian rennet.
