St Jude is one of our most local cheeses and is made from a single herd of Montbeliarde cows on a family farm in Suffolk. Every cheese is handmade in small batches with care, passion and respect for the high quality milk.
St Jude is a beautiful, soft, mould ripened cheese with a fantastic rich and creamy flavour. When young, it has a fluffy, mousse like texture which gets gooier and softer as it ripens. We think of it as clotted cream in cheese form.
This cheese is 4 weeks old and is made with raw cows’ milk and traditional rennet.
