Fromagerie Segalafrom, producers of Bouyguette, was founded in 1978 in the Midi-Pyrénées region of France. The herd of 150 goats graze on the ‘Colline aux Chevres’ which has a diverse flora and produces an exceptionally high quality goats’ milk. Each cheese is hand ladled into moulds and then matured.
When young, the Tomette is semi-soft and slightly chalky in the middle however, it quickly ripens and becomes ultra rich and creamy with a more intense, farmyard flavour.
This cheese is aged for 1 month and is made with raw goats’ milk and traditional rennet.
