Mimolette is a traditional French cheese made close to the city of Lille in France but was inspired back in the 17th century by Dutch recipes for Edam cheese.
Mimolette is a hard cheese with an iconic electric orange colour and a smooth, silky texture. The cheese has an intensely nutty, fruity and sweet, caramelised flavour.
This cheese is aged for at least 18 months and is made with pasteurised cows’ milk and traditional rennet.
