Harbourne Blue is made by Ticklemore Dairy in Devon using milk from Parsonage farm, near the dairy. It is the sister cheese to Devon Blue and Beenleigh Blue, made with goats’ milk and based on a Roquefort recipe.
Harbourne Blue is a very strong, sharp and salty cheese with a dry, crumbly texture. The flavour is reminiscent of yoghurt, with a clean, lactic flavour and can be aromatic or floral, based on the season.
This cheese is aged for 4 to 6 months and is made with pasteurised goats’ milk and vegetarian rennet.
